Cheese Tortellini With Roasted Cauliflower & Filberts

This quick, easy one-dish meal was found in Sobey's Inspired Magazine. I haven't tried it yet but hope to soon.
Ingredients:
3 cups cauliflower, cut into small florets (1 small head)
1 tablespoon olive oil
3 slices bacon or 3 slices veggie bacon, cut into 1-in . pieces
1/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup filberts, chopped (hazelnuts)
2 small shallots, finely diced
2 tablespoons chopped fresh thyme leaves
1 (350 g) package fresh cheese filled tortellini
2 tablespoons fresh chives, finely sliced (for garnish)
Directions:
1. Preheat oven to 425°F (220°C) and bring a large pot of salted water to a boil.
2. Meanwhile, in a large bowl, combine cauliflower, olive oil and bacon. Season with salt and pepper and mix well.
3. Spread mixture out in a large roasting pan and roast, stirring occasionally, until cauliflower is golden and bacon is crisp, (about 15 to 18 min).
4. Stir in nuts, shallots and thyme.
5. Return pan to oven and roast 3 to 5 minute longer.
6. Cook tortellini according to package directions, drain well and toss gently with the roasted cauliflower mixture.
7. Taste and adjust seasonings, if necessary, garnish with chives and serve.
