This is from The Swiss Cookbook . I haven't made it yet. The author says that it is traditional.
Ingredients:
1/2 cup oatmeal
1 teaspoon salt
1/2 cup butter
4 -6 cups water (or consomme)
2 potatoes, peeled and cut into thin slices
2 cups grated emmenthaler cheese
1 dash nutmeg (optional)
Directions:
1. Saute the oatmeal and salt in half the butter until golden brown.
2. Add the water; bring to a boil. Cook over low heat, stirring occasionally and adding water if necessary, until the oatmeal is cooked into a gruel. This will take about 90 minutes.
3. Add the sliced potatoes. Cook about 30 minutes until they are tender.
4. Stir in the grated cheese, remaining butter and nutmeg if desired. Add additional hot water if it's too thick.
