Cheese Sauced Baked Potatoes

Dressed-up baked potatoes.
Ingredients:
6 baking potatoes, your favorite variety
1 cup shredded sharp cheddar cheese
1/2 cup sour cream
1/2 stick butter
2 tbsp chopped green onion
Directions:
1. Set out cheese, sour cream, butter and onion so they can come to room temperature.
2. Scrub potatoes thoroughly. Prick potatoes with tines of fork.
3. Bake at 425 for 40 to 60 minutes or until done.
4. Before potatoes are done, combine cheese, sour cream, butter and onion in a small bowl and beat them until they are fluffy.
5. Pick up hot potatoes with pot holders or oven mitts and roll gently between the palms of your hands.
6. Cut a crisscross in top of each potato and press the ends so that the centers fluff up.
7. Spoon cheese topping over each potato.
