Cheese Refrigerator Rolls

These rolls are delicious with baked ham! This recipe was published in the cookbook North Carolina and Old Salem Cookery by Beth Tartan.
Ingredients:
2 (1/4 ounce) packages dry yeast
1/2 cup lukewarm water
1/2 cup milk
1/2 cup butter
4 tablespoons sugar
1 teaspoon salt
3 eggs, well beaten
1 cup sharp cheddar cheese, grated
4 1/2 cups sifted flour (approximate)
Directions:
1. Mix yeast with water according to the package directions. Set aside.
2. Scald milk and add butter and sugar. Cool to lukewarm.
3. Add yeast mixture to milk, along with salt and eggs. Mix well.
4. Add cheese and flour to make a soft dough. Turn out on a lightly floured board and knead until smooth.
5. Place in a greased bowl, cover, and allow to rise in a warm place until double in bulk. Punch down. Grease with butter, cover, and store in the refrigerator.
6. Before shaping into rolls, allow dough to stand for about 1 hour at room temperature. Make into rolls and place on a greased sheet pan. Allow to rise until double in bulk in a warm place.
7. Bake at 375 degrees F for about 15 minutes, or until golden brown.
