1. Melt butter in a large nonstick skillet. 2. Cook potatoes until almost tender and lightly browned. 3. Sprinkle with salt and pepper. 4. Pour milk over all; boil gently until milk is absorbed. 5. Sprinkle with cheese and allow to melt. 6. Stir; sprinkle with parsley and serve immediately. 7. Yield: 6 servings.
