To make Yorkshire Pudding Popover as an accompaniment to roast beef, mit the cheese, and use 4-6 tablespoons of the pan drippings to replace the butter. Put them into the oven in time to serve warm with beef.
Ingredients:
3 eggs
1 cup milk
2 tablespoons butter, melted
3/4 cup flour
1/4 teaspoon salt
1/4 teaspoon paprika
6 tablespoons parmesan cheese, freshly grated
Directions:
1. Preheat the oven to 425 degrees F. Grease 12 small remaekins or popover cups.
2. With an electric mixer, beat the eggs until well blended. Beat in the milk and melted butter.
3. Sift together the flour, salt, and paprika, then beat into the egg mixture. Add the cheese and stir.
4. Fill the prepared cups half-full and bake until golden, 25-30 minutes. Do not open the oven door during baking or the popovers may fall. For dry popovers, pierce each one with a knife after the 30 minutes backing time and bake for 5 minutes more.
