Cornmeal used to be difficult to find, but it is now widely available in most major supermarkets and health-food stores.
Ingredients:
generous 3/4 cup white flour
1tbsp baking powder
1 tsp salt
1 1/2 cups grated sharp cheddar cheese
4 tbsp butter, melted
2 large eggs, beaten
1 1/4 cups milk
1 1/2 cups fine cornmeal
Directions:
1. Preheat the oven to 400 degrees F/200 degrees C.
2. Line 10 cups of a 12 cup muffin pan with muffin paper liners.
3. Sift the flour, baking powder, and salt into a bowl, then stir in the cormeal and 1 cup of cheese
4. Place the melted butter, eggs, and milk in a separate bowl.
5. Add the wet ingredients to the dry ingredients and mix gently until just combined.
6. Divide the batter evenly between the paper liners. sprinkle over the remaining cheese, and bake in the oven for 25 minutes, or until risen and golden.
7. Remove from the oven and serve warm, or place on a cooling rack and let cool.
