Cheese Lovers' Super Rich Macaroni & Cheese

Extremely rich, but delicious macaroni and cheese recipe that uses a full pound of cheddar cheese.
Ingredients:
8 ounces elbow macaroni
8 ounces shredded mild cheddar cheese
8 ounces shredded extra-sharp cheddar cheese
3 tablespoons butter
2 1/2 cups milk
1/4 cup self rising flour
1 teaspoon salt
1/4 teaspoon ground pepper
1 egg
Directions:
1. Boil macaroni for 10-12 minutes. Drain until cool.
2. Beat egg and mix with macaroni in large mixing bowl. Set aside.
3. Melt butter in large sauce pan over medium heat.
4. Add flour, salt, and pepper and stir until througly mixed.
5. Add milk and stir frequently over medium heat until thickened and milk starts to foam.
6. Remove from heat and stir in both cheeses until melted, reserving 1/2 cup of each to sprinkle on top.
7. Add cheese sauce to bowl with macaroni and stir until well mixed.
8. Pour mixture into a greased 3 quart casserole dish.
9. Sprinkle remaining cheese on top.
10. Bake at 375 degrees for 30 mintues or until cheese topping is golden brown and slightly bubbling.
