Ingredients:
3 whole(s) carrots, shredded
4 whole(s) eggs, beaten
1 can(s) fat free egg substitute
1/4 cup(s) green onion, chopped
1 cup(s) mushrooms, sliced
1 cup(s) shredded 2% mexican blend cheese
2 whole(s) zucchini, medium, diced
Directions:
1. Combine eggs and egg substitute. Saute all veggies in large sprayed sauce pan over medium heat for 5 minutes. Add egg mixture to pan and let cook for 2-3 minutes, stirring often. Add cheese and stir until cheese has melted and eggs are cooked.
