Cheery Cherry Pie

This cherry pie is quick to assemble and the house smells lovely while it's baking. It looks pretty and has a bit of a crunch from the streusel.
Ingredients:

2 - 14.5 ounce cans of tart pitted red cherries
3 tbsp. cornstarch
1 cup sugar
1/8 tsp. salt
1/3 tsp. cinnamon
1/4+ almond extract
1 - 9 pie shell
streusel
4 tbsp. melted butter
1/2 cup all-purpose flour
1/2 cup steel-cut irish oatmeal
1/3 cup dark brown sugar, packed
1/2 tsp. cinnamon
confectioner's sugar to sprinkle as garnish
Directions:
1. Preheat oven to 425 degrees.
2. Drain the liquid from the cherries' cans into a saucepan and add the cornstarch, sugar, salt, and cinnamon to the pot. Whisk over medium heat until this starts to thicken.
3. When the liquid starts to thicken remove from heat and stir in the almond extract.
4. Pour this liquid and the cherries into the pie shell.
5. To make the streusel simply cut all of the ingredients with a fork in a bowl together until it is crumbly.
6. Scatter this evenly over the entire top of the pie.
7. Bake at 425 for 10 minutes.
8. Turn the heat down to 350 and bake another 25 minutes.
9. Remove from the oven and cool on a rack.
10. Dust lightly with a bit of confectioner's sugar just for a bit on contrast.
