I made this up today for lunch for the guys and they loved it.. I even paid attention to the ingredents this time! My sister is the one wyo started me on adding diffrent veggies when making this... as a way to sneak it to the kids! Read more ! Hope you enjoy!
Ingredients:
3 tbsp butter
2 carrots -- grated
1/2 cup celery diced small
1 large onion minced small or grate
1 small parsnip peeled & grated
2 -3 c ups cheddar cheese grated
2 tbsp butter
4 tbsp flour
4 cups rich chicken broth or consomme
2 c ups whole milk or half and half...
salt and pepper to taste
a hand full of fresh parsley chopped fine
Directions:
1. Melt the 3 tablespoons butter in a saucepan
2. add the vegetables.
3. Cover and simmer 10 minutes over low heat.
4. Blend 2 tablespoons butter with flour and add to vegetables and chicken broth.
5. Stir together until creamy and continue cooking over low heat for about 5- 8 minutes.
6. Add grated cheese
7. Stir until melted.
8. Add cold milk or half and half slowly.
9. Continue to cook for another 10 minutes.
10. Do NOT boil after cheese is added.
11. Season to taste
12. with salt and papper, add a big handful of chopped parsley and serve.
