Cheddar Stuffed Chilies

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Byrd Estate in Cedar Hill, Texas in 1993.
Ingredients:
2 cans whole green chilies
1/2 pound cheddar cheese cut into 1 inch strips
1 cup cracker crumbs
1 egg beaten with small amount of milk
Directions:
1. Wash chilies under cold running water and spilt to remove seeds.
2. Put cheese strip inside and fasten with toothpicks.
3. Dip in egg mixture and roll in cracker crumbs.
4. Brown on all sides in a skillet in oil then reduce heat and cook until cheese is melted.
