Cheddar Spinach Squares

Michael Raimondi, a true-foodie friend of mine, agreed to share this recipe with me several years ago. The last stir is a bit stiff so be prepared.
Ingredients:
4 tablespoons butter, cubed
3 large eggs
1 cup all-purpose flour
1 cup milk
1 teaspoon salt
1 teaspoon baking powder
1 pound sharp cheddar, shredded
2 10-ounce packages frozen chopped spinach, thawed and drained
3 tablespoons onion, chopped
Directions:
1. Place butter pats in a 9x13x2 pan.
2. Place pan in oven.
3. Preheat oven to 350 degrees F.
4. While butter is melting (keep an eye on it), beat the eggs in a large bowl.
5. Add flour, milk, salt and baking powder.
6. Mix well.
7. Add cheese, spinach and onion.
8. Mix well again.
9. Spoon into baking dish and level off.
10. Bake for 40 minutes.
11. Remove from oven.
12. Allow to cool for 45 minutes.
13. Cut into squares.
14. **These can be frozen and baked at 350 for 20 minutes to heat.
