Cheddar Raisin Muffins

These muffins are a wonderful accompaniment to ham, pork chops, or grilled chicken. The raisins make them sweet, the cheese keeps them savory. They are best served warm right from the oven.
Ingredients:
2 cups all-purpose flour
3 1/2 teaspoons baking powder
3/4 teaspoon salt
6 tablespoons butter
1 cup sharp cheddar cheese, shredded
1 egg, beaten
1 cup milk
3/4 cup raisins
Directions:
1. Preheat oven to 400 degrees.
2. Sift flour with baking powder and salt. Cut in butter, until it forms coarse crumbs. Stir in cheese.
3. Blend egg and milk. Add to dry mixture, stirring only until moist. Fold in raisins.
4. Spoon batter into greased muffins tins, filling 2/3 full. Bake 25 minutes, or until brown, Serve hot.
