CHEDDAR CHEESE WAFFLES WITH SAVORY SYRUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cabrera Estate in Malakoff, Texas in 1986.
Ingredients:
2 cups sifted all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 large egg yolks
1/2 cup melted butter
1 1/2 cup skim milk
1 cup shredded sharp cheddar cheese
3 egg whites
savory syrup
1 cup maple syrup
1 whole bay leaf
1/4 teaspoon ground thyme
Directions:
1. Preheat waffle iron.
2. Preheat oven to 200 to keep waffles warm before serving.
3. Sift flour, baking powder, baking soda and salt into a mixing bowl.
4. In another bowl combine egg yolks, melted cooled butter and milk.
5. Stir liquid and dry ingredients together and add cheese.
6. In separate bowl beat egg whites until stiff and fold into batter until barely blended.
7. Spoon batter into waffle iron covering about two-thirds of the grid surface.
8. Cook according to manufacturer's instructions.
9. Place waffles into heated oven uncovered until ready to serve.
10. For syrup place ingredients in a heavy saucepan then stir and heat until boiling.
11. Lower heat and simmer about five minutes then remove bay leaf and pour syrup over waffles.
