Cheddar Cheese Soup

This is great to serve on a cold day.....
Ingredients:
1 cup finely chopped onions
1 cup finely chopped carrots
1 cup finely chopped celery
1/2 cup butter
1 cup flour
1 quart chicken stock
1 quart milk
3 cups grated cheddar cheese
1 teaspoon salt
1/2 teaspoon white pepper
Directions:
1. Saute vegetables in butter until soft.
2. Add flour and mix until smooth.
3. Add chicken stock.
4. Bring to a boil;reduce heat and simmer for 15 minutes.
5. Add cheese and cook 10 minutes longer.
6. Add milk, salt and pepper.
7. Heat to serving tempature.
8. Makes approximatrely 2 quarts or 12 servings.
