Cheddar Broccoli Chowder

A cold weather soup to warm you. Easy to make lacto-vegetarian.
Ingredients:
2 tablespoons butter
1 onion, finely chopped
1/4 cup flour
3 cups chicken stock
2 cups potatoes, peeled and cubed
1 bay leaf
3 cups broccoli, finely chopped
1 1/2 cups milk
1 1/2 cups cheddar cheese, grated
hot sauce (optional)
Directions:
1. Melt butter in large saucepan.
2. Cook onion until softened.
3. Blend in flour.
4. Stir in stock.
5. Bring to a boil, stirring until thickened.
6. Add potatoes and bay leaf.
7. Reduce heat.
8. Cover and simmer, stirring occasionally for 10 minutes.
9. Add broccoli and simmer, stirring occasionally for 10 minutes.
10. Stir in milk and cheese.
11. Heat until cheese melts.
12. Remove bay leaf.
13. Do not let soup boil.
14. Season to taste.
