Cheddar Bacon Muffins

These are a nice, make-ahead breakfast on the go.
Ingredients:
8 ounces bacon, chopped into small pieces
1 3/4 cups whole wheat flour
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
1 1/2 cups shredded cheddar cheese
2 small eggs, beaten
1 cup skim milk
3 tablespoons margarine, melted
Directions:
1. Preheat oven to 400 degrees.
2. Cook bacon until crisp & set aside to cool.
3. In a large bowl, combine flour, sugar, baking powder and salt. Stir cheese into dry ingredient mixture.
4. In a small bowl, beat eggs, add milk and margarine. Add egg mixture to dry ingredients & stir just to moisten.
5. Divide batter among 12 medium muffin cups that have been sprayed with Pam (cups will be quite full).
6. Bake approximately 15 minutes.
