For a tasty treat this weekend, treat family or friends and serve them paninis of toasted whole grains, melted aged cheddar, lean turkey and a burst of flavour from a Mcintosh apple - so good! I found the recipe in our local newspaper, and it is really good for the leftover turkey at holiday time, it makes something just a little different to use up the leftovers -
Ingredients:
4 slices aged cheddar cheese
4 slices whole grain bread
1 mcintosh apple, peeled, cored and thinly sliced
4 slices smoked turkey breast or 4 slices leftover turkey breast, will do
2 teaspoons honey mustard
1/2 cup baby spinach
Directions:
1. Heat a panini press or a cast iron pan over medium-high heat. Divide cheddar evenly between two slices of whole grain bread, followed by 2 slices apple and 2 slices of smoked turkey.
2. Spread remaining two slices of bread with honey mustard and place on top of the turkey (mustard side down).
3. Place sandwiches in heated panini press or cast iron pan and grill for 4-5 minutes, turning as necessary to evenly brown the bread on both sides of the sandwich.
4. Once cheese is melted and bread is golden brown, remove sandwiches from the heat. Remove tops of sandwiches, add spinach. replace tops and serve immediately.
