Cheat Garlic Sauteed Roast Potatoes

you can scale this recipe to suit. I do as much as my tray can hold and leave some to go cold to be used in omelette the following day, or freeze them to make my own ready meal roast potatoes.
Ingredients:
2 kilos (4lbs) potatoes
200 ml mild oil (eg olive oil, sunflower oil)
50grams (2 oz) butter.
2 cloves of garlic (crushed)
Directions:
1. peel the potatoes.
2. halve or quarter the potatoes if large.
3. preheat oven to 200 deg c
4. put oil in baking tray and place in oven.
5. parboil potatoes for 15 to 20 mins until the edges are starting to crumble.
6. drain potatoes
7. gently shake potatoes in pan to get crumbly edges all over.
8. carefully tip potatoes into the hot oil in the tray.
9. Gently turn potatoes to coat in oil.
10. Roast for 15 mins.
11. Turn potatoes and roast for another 10 mins.
12. When potatoes are lightly golden brown add the butter and garlic to potatoes and turn the potatoes to coat evenly.
13. Roast potatoes for a further 5 mins.
14. Serve.
