We eat this at least once a week because it is so cheap and easy. This freezes VERY well and tastes great the second day.
Ingredients:
1 red bell peppers (whatever you're in the mood for) or 1 hot pepper (whatever you're in the mood for)
1/2 white onion
1 large tomato
1 cup black beans, dry
1 cup pinto beans, dry
1 (32 ounce) bag corn chips
2 garlic cloves
1 tablespoon olive oil
2 teaspoons chili powder
2 teaspoons salt
2 teaspoons sugar
Directions:
1. Soak beans in a bowl full of plenty of water overnight.
2. Drain and rinse beans and put into a large pot of boiling water, reduce heat, cover, and simmer for about 2 hours or until done. Add water as needed-you cannot add too much water!
3. Dice the onion, tomato, pepper, and garlic.
4. Add garlic, onions, salt, and oil to a fry pan over medium heat. Saute for about 5 minutes.
5. Add other vegetables and sugar and raise heat to medium-high, saute for another 5 minutes. Saute longer if you want mushier veggies (some kids will prefer this).
6. Add beans and chili powder and cook until heated through, then reduce heat to low, cover, and let it sit for about 5 minutes.
7. Serve hot over corn chips. Put some fresh cilantro on top if you have it!
