I make this for my fiance and I a few times a month, it's simple, cheap and filling! We love it.
Ingredients:
2 or 3 large chicken breasts.
1 packet of general tso's sauce mix ($1.25 at kroger).
1 bag of frozen mixed stir fry vegetables ($1 at kroger).
1 1/2 cups cooked rice of your choice, i use jasmine rice.
crushed red pepper flakes.
1 tbsp. soy sauce.
1/3 cup water.
1/4 cup sugar.
1/3 cup flour.
1 egg (optional)
Directions:
1. If frozen, thaw chicken breasts. Cut into chunks or strips, and roll in a bowl with flour until evenly coated.
2. Heat oil in a medium sauce pan, and stir fry chicken until brown on all sides.
3. Add mixed vegetables to the chicken, and maybe even add a little more oil so nothing burns.
4. While the veggies and chicken are cooking, combine general tso's mix, soy sauce, water, sugar and a bit of crushed red pepper flakes if you'd like.
5. Add the sauce mix to the chicken and veggies, and add even MORE crushed red pepper flakes if you'd like. Stir fry until the sauce is thick.
6. Serve over rice.
7. If you would like, you can fry the rice in a pan with oil and add one beaten egg and soy sauce for a cheap and easy variation of fried rice.
