This is an unusual salad but oh so good. You just can't go wrong with Chayotes and Peppers. The combination is awesome. Want to impress somebody, serve this one. Yummy
Ingredients:
2 chayotes peeled cut in half and pits removed
1 large red bell pepper cored and seeded and cut into julienne strips
1/2 teaspoon extra virgin olive oil
juice of 2 limes
1 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. Slice chayotes as thin as possible and cut into julienne strips.
2. Combine chayote and bell pepper in a bowl.
3. Add olive oil and lime juice.
4. Season with salt and pepper.
5. Toss well and let sit for 15 to 20 minutes before serving.
