Chavrie Chilled Cucumber Avocado Soup

This soup is quite unique and absolutely delicious! The creamy fresh goat cheese and velvety avocados compliment the crisp cucumbers with a touch of sweetness from coconut milk! Perhaps this could make for a great Mother's Day Brunch? Read more ?!
Ingredients:
1 pkg. (5.3oz) chavrie® goat cheese
3 ea. seedless cucumber (peeled and cubed)
2 ea. ripe avocados
1/4 c unsweetened coconut milk
3 ea. lime juice
1 tsp. cumin
1 tsp. tabasco
1 tbsp. ginger minced
salt and pepper to season
Directions:
1. Split the avocado in half, remove the pit and scoop pulp into a blender.
2. Add cucumber pieces.
3. Puree until smooth.
4. Add coconut milk, lime juice, cumin, Tabasco, ginger and Chavrie®, blend well.
5. Season with salt and pepper.
6. Chill well before serving.
