From a Galveston-area church cookbook, a wonderful and moist cake.
Ingredients:
2 cups sugar
2 cups flour
1 teaspoon salt
1 teaspoon baking soda
4 eggs
3 teaspoons cinnamon
1 tablespoon cocoa
2 teaspoons cocoa
1 1/2 cups pumpkin puree
1 1/2 cups oil
2 teaspoons vanilla
1 (1 lb) box powdered sugar
1/2 cup butter or 1/2 cup margarine
4 ounces cream cheese
1 tablespoon milk
1 cup pecans
Directions:
1. Beat eggs and add sugar. Beat well.
2. Add flour, salt, baking soda, cinnamon, 1 tablespoon cocoa, pumpkin, oil, and 1 teaspoon vanilla. Mix well.
3. Pour into a greased 13x9 pan and bake at 350 degrees for 1 hour. Cool.
4. Mix powdered sugar, 2 teaspoons cocoa, butter, cream cheese, 1 teaspoon vanilla, and milk until smooth and creamy. Add pecans.
5. Frost cooled cake.
