Chase's Favorite Taco Soup

This soup is a wonderful change from the normal tacos . I named it after my 4yr old who ABSOLUTELY LOVES it!! You can add different beans, or onions etc. I cook without onions as I'm allergic, but am sure they'd be a great addition!
Ingredients:
32 ounces tomato juice
6 -8 cups water
2 (2 1/2 ounce) packages taco seasoning
1 1/2 cups white rice
2 lbs lean ground beef
2 (15 ounce) cans kidney beans
2 (15 ounce) cans refried beans
2 (15 ounce) cans pinto beans
1 scoop tortilla chips
shredded cheese
Directions:
1. In large pan combine tomato juice, half the water, taco seasoning & rice. Bring to a boil, then simmer until rice is cooked through.
2. Meanwile brown ground beef in a skillet, drain and set aside. (I run mine through the food processor to make it less chunky, my kids eat it better this way!).
3. Slowly stir in the refried beans. (It's easier to mix them in first). Next combine the remaining ingredients. Bring to a boil and simmer for about 5 minutes. Just long enough to combine the flavors.
4. Serve in bowls, sprinkle generously with cheese. Serve with chips.
