This isn't the typical lasagna recipe. There is tomato sauce, but not the heavy ragu kind. It's juicier than the usual, but my kids (young and old) just love it. This is my mother-in-law's recipe. Try it and let me know what you think! :)
Ingredients:
1 lb ground beef
1 lb ground pork
3/4 cup chopped onion
1 minced garlic clove
1 (15 ounce) can diced tomatoes, undrained
1 (15 ounce) can tomato sauce
2 tablespoons parsley flakes
2 tablespoons sugar
1 teaspoon salt
1 teaspoon dried basil leaves
1 teaspoon dried oregano
3 cups cream-style cottage cheese
1/2 cup parmesan cheese
3/4 cup mozzarella cheese
1 tablespoon parsley flakes
1/2 teaspoon salt
8 ounces lasagna noodles
1/2 cup parmesan cheese
Directions:
1. Brown ground beef, onion and garlic; drain off fat.
2. Stir in tomatoes, tomato sauce, 2 tablespoons parsley, sugar, 1 teaspoon salt, basil and oregano.
3. Heat to boiling, then reduce and simmer, uncovered for 1 hour.
4. Mix cottage cheese, mozzarella cheese, 1/2 cup parmesan cheese, 1 tablespoon parsley flakes, 1/2 teaspoon salt.
5. Reserve 2 cups meat sauce for top.
6. In an ungreased 3-quart casserole dish, layer 1/4 of the noodles, meat sauce and cheese mixture.
7. Repeat layers 3 more times.
8. Spread top with reserved meat sauce and the remaining 1/2 cup parmesan cheese.
9. Bake at 350 degrees for 1 hour or until bubbly.
