Charred Tomato Vinaigrette

A wonderful vinagrette. Enjoy
Ingredients:
5 roma tomatoes
1 cup extra-virgin olive oil plus oil to coat tomatoes divided
1 shallot minced
2 cloves garlic minced
1/4 cup rice wine vinegar
1 tablespoon sugar
1 teaspoon salt
1 teaspoon freshly ground black pepper
fresh spinach leaves to serve 6 people
freshly grated parmesan cheese
Directions:
1. Slice tomatoes in half lengthwise.
2. Brush lightly with a little olive oil and grill over charcoal until tomatoes are slightly charred.
3. Remove from grill then set aside and cool slightly.
4. In blender puree tomatoes with shallot, garlic, vinegar and sugar.
5. Pour mixture into bowl.
6. Add 1 cup olive oil and whisk to blend then season with salt and pepper.
7. Toss with spinach and cheese.
