Charlotte's Lemon Loaf

Light delicious Lemon loaf goes well with natural unsweetened yoghurt. If there are any leftovers they will freeze well.
Ingredients:
125 g butter
1 cup white sugar
2 eggs
1 1/2 cups self raising flour
1 pinch salt
1 lemon juice, and rind
125 ml milk
Directions:
1. Preheat oven to 180.
2. Grease and line loaf tin with baking paper.
3. Beat the butter and sugar until pale and creamy.
4. Add the eggs separately, beating well after each egg.
5. Stir in Flour, Salt and lemon rind.
6. Gradually add warmed milk.
7. Transfer the mixture to the prepared tin and bake for 45 - 50 minutes or until a skewer instead into the centre comes out clean (do not open the one door while the loaf is cooking).
8. Remove the loaf from the tin, and while it is still warm, sprinkle liberally with caster sugar.
9. Pour over the lemon juice then sprinkle liberally with more sugar.
10. Stand for 15 to 20 minutes before serving.
