Chardonnay Spinach Turkey Burgers

Easy twist on a burger. I love this recipe. Great moist flavor and served with, feta cheese and of course ... fresh tomato and my tarragon mayo.
Ingredients:
2 lbs ground turkey
8 hamburger buns (use your favorite, i like ones from my deli, but any kind you like)
1 (10 ounce) box frozen chopped spinach (drained, squeezed and thawed)
4 slices bacon, diced and sauteed
1/4 cup grated onion
2 eggs, beaten
4 ounces feta cheese
1/4 cup chardonnay wine
2 teaspoons garlic, minced
2 teaspoons fresh parsley, chopped fine
2 scallions, greens chopped
1 teaspoon kosher salt
1 teaspoon ground black pepper
1 tablespoon fresh tarragon, minced
4 tablespoons mayonnaise
1 pinch red pepper flakes
Directions:
1. Bacon - Saute the bacon in a non stick pan on medium heat until crispy, add the onion and garlic and cook just a minute until soft.
2. To a large bowl, add the turkey, bacon mixture, (not the drippings), eggs chardonnay, parsley, scallions, spinach and mix well but do not over mix. It will only make the burgers tough.
3. Form the patties - and cover and freeze for 15-30 minutes. This just helps them to stay together once grilled.
4. Make the aioli - Mix the mayonnaise, red pepper and tarragon.
5. Grill away! Just grill in a saute pan, grill pan or outside - which ever you have. Make sure to add the cheese and melt to get nice and gooey.
6. For the burger - I like to toast the bun, that is up to you and then slather with the mayo, add the lettuce and tomato and that is all it needs.
7. Now you can add mustard or other condiments but I don't think anything else is needed with this burger. Make ahead and freeze and make the next week.
