Channel is launching their first chop in Egypt in two weeks and they are preparing for the event . They needed a dessert supplier for the party.A friend of mine who has connections with the organizer insist that I should send some samples with new ideas and this is what I sent. Read more . Ingredients:
crust
1/2 cup (1 stick) (113 grams) unsalted butter, room temperature
1/4 cup (25 grams) confectioner's (powdered or icing) sugar
1 cup (140 grams) all purpose flour
1/8 teaspoon salt
filling
140 grams cream cheese, room temperature
100 grams granulated white sugar
1/2 cup fresh lemon juice
2 large eggs
1 tablespoon grated lemon zest

Directions:
1. Preheat oven to 350 degrees F and place rack in center of oven. Cover with foil and grease with butter an 8 x 8 inch (20 x 28 cm) pan.

3. In the bowl of your electric mixer, or with a hand mixer, cream the butter and sugar until light and fluffy. Add the flour and salt and beat until the dough just comes together. Press into the bottom of your greased pan and bake for about 20 minutes, or until lightly browned. Remove from oven and place on a wire rack to cool while you make the filling.

5. Preheat oven to 375F.
6. Beat the cream cheese until smooth. Add sugar and beat until incorporated. Add eggs, one at a time, and beat until combined. Add remaining ingredients and process until well blended and smooth. Pour filling over baked crust and bake for approximately 25 - 30 minutes or until filling is set. Transfer to a wire rack to cool and then cover and refrigerate until well chilled, at least an hour.
7. Take it out from the pan and place on a cutting board and cut into squares.
8. I found some rubber letters and numbers that belong to my little kid. I spitted the O letter into half lengthwise and then inverted them and used an UHU to stick them together to form the channel logo. I placed the logo over each square and sprinkle some powder sugar over and then left the logo. I had to deliver the samples the second day and that was the only way available in such short time.
