Another traditional Irish preparation for potatoes, similar to Colcannon, but minus the cabbage.
Ingredients:
6 -8 potatoes, boiled
1 cup scallion, chopped
1 1/2 cups milk
4 -8 tablespoons butter
salt and pepper, to taste
Directions:
1. Cook scallions in milk until soft.
2. Mash freshly-boiled potatoes; add hot milk and cooked scallions.
3. Season to taste.
