Five loaves that are the best Challah you have ever eaten.
Ingredients:
4 cups water, at 115-120 degrees
4 (1/4 ounce) packages dry yeast
1 tablespoon sugar
1 (5 lb) bag bread flour
2 tablespoons kosher salt
1 3/4 cups sugar
8 eggs
3/4 cup oil
Directions:
1. Add both liquid mixtures to the dry ingredients and knead til dough is formed. Add up to 1/2 c additional oil if necessary.
2. Grease a large bowl and all sides of dough. cover with a cloth towel and let rise for one hour.
3. Punch down and spread more oil on top. cover again and allow to rise a minimum of one hour and up to 3 or 4.
4. Divide dough into five even sections. Form each section into 3 long cylinders and braid. You can put them into greased aluminum bread pans or not. Arrange tall glasses around baking pans to balance towels so they cover but don't touch the dough. Allow to rise for an additional 1 to 1 1/2 hours.
5. Before baking, brush top with 1 egg mixed with 1 T sugar.
6. Bake at 350 for 30 minutes.
