Ingredients:
4 baking potatoes scrubbed
1/3 cup sour cream
1/4 cup buttermilk
2 tablespoons fresh cilantro chopped
2 tablespoons tomato salsa
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 cup pepper jack cheese grated
Directions:
1. Pierce potatoes with a fork and wrap individually in a double thickness of paper towels.
2. Microwave on high for 5 minutes.
3. Rotate potatoes and microwave on high until tender about 5 minutes longer.
4. Unwrap potatoes and let cool slightly then cut off a 1/4 thick slice along top of each potato.
5. With a spoon carefully hollow out potatoes leaving the shells.
6. Put insides in a medium bowl and mash with a fork or potato masher.
7. Add sour cream, buttermilk, cilantro and salsa then mix well.
8. Season with salt and pepper and fill shells with potato mixture.
9. Arrange potatoes in a microwave safe pie plate or baking dish then cover with vented plastic wrap.
10. Microwave on high for 5 minutes then sprinkle with cheese and serve.
