Great on a hot summer day. The citric acid in the juices cooks the scallops perfectly.
Ingredients:
1.5 lb bay scallops
1.0 c orange juice
0.5 c lime juice
0.5 c lemon juice
1.0 tomato, diced small
0.5 red onion, diced small
1.0 serrano pepper, diced small
2.0 cloves garlic, minced
salt to taste
Directions:
1. Combine all ingredients.
2. Cover and chill 6 hours or over night.
3. Drain.
4. Serve in parfait glasses as an appetizer or light meal.
