Ingredients:

Directions:

  1. Pick through beans and remove any that are damaged or spoiled.
  2. Also, remove any remaining hulls.
  3. In a large saucepan bring water to boil and add peas and garlic.
  4. Cook until peas are tender.
  5. Rinse peas under cold water to stop cooking process.
  6. Drain thoroughly, remove garlic, and combine with green pepper, onion, oil, vinegar, pepper flakes and salt.
  7. Mix well.
  8. Cover and refrigerate for at least 2 hours (more is better).
  9. Transfer to a relish dish and serve with a slotted spoon to allow liquid to drain.
