A tangy pang to an old family favorite. Great for those summer days when you just do NOT want to turn on the oven!
Ingredients:
5 - 6 celery stalks
2 carrots
1/2 cup walnuts
3/4 cup raisins
good sized chunk fresh ginger
1/3 cup light mayo
1 - 2 tbs lemon juice
Directions:
1. Chop the celery and carrots into bite-sized pieces
2. Grate the ginger
3. Dump all ingredients into bowl and stir!

5. If desired, place the salad into the fridge for about an hour to let the flavors meld.
6. For extra umph, try adding grapes cut in half and/or diced apples.
