Ever have leftover celery? You buy it for a dish, but only need a stalk or two? Well, try this if you want...an easy casserole type dish that I dedicate to dd/jj...my biggest fan...one of the few folks who'd get me to add a can of cream soup to a recipe! Read more ! ;)
Ingredients:
3 cups celery, thinly sliced
1/2 stick butter
2 cloves garlic, chopped
1 package frozen peas
1 can water chestnuts, sliced
8oz fresh mushrooms, sliced
1 can cream of celery soup(i use my own version--see my recipe list for that recipe
1/4 cup milk or half and half
1 small can french fried onions
1t cayenne pepper
salt and pepper
Directions:
1. In large saucepan, saute celery and garlic in butter until celery is tender, about 10 minutes.
2. Add peas, chestnuts, mushrooms, soup, milk, 1/2 of the onions, salt and peppers.
3. Pour all into 2q casserole dish and bake at 350 for about 20 minutes.
4. Add rest of onions and bake until golden brown, about 5-10 minutes more.
