Celebration Ice Cream Cone Cake

My son wanted me to make him an ice cream cake for his birthday. This is what the twins & I came up with and it was a huge hit! As you can see in the photo, my ice cream scoop does not work well. It is even better looking with nice, round, fat scoops of ice cream. Read more . These directions are just a guideline as we were basically making this up as we went along. Have fun and be creative!
Ingredients:
1 cake mix
ice cream ( i used approximately 1 gal.)
1 box of ice cream cones
1 can of frosting
8oz. cream cheese
karo syrup
coarse colored sugar or sprinkles
garnishes of choice; ex: maraschino cherries, reeses pb cups, whipped cream.
Directions:
1. Prepare cake mix according to package directions in 2 - 8 cake pans.
2. Cool layers completely on wire racks.
3. Spread 1/2 gallon of your ice cream of choice in the same cake pan the cake was baked in. (The pan should be washed & lined with plastic wrap.)
4. Freeze the ice cream layer until firm.
5. Meanwhile:
6. Beat the can of frosting and cream cheese until smooth & set aside for frosting the cake.
7. Brush ice cream cones with Karo syrup and roll in coarse, colored sugar if desired.
8. ASSEMBLY:
9. Working quickly: place the ice cream between the two layers of cake, trimming the edges if necessary.
10. Apply frosting to the cake, smoothing the surface as you go. Return cake to freezer.
11. While the cake is in the freezer: cut enough ice cream cones in half to circle the diameter of the cake.
12. Remove cake from freezer & press the ice cream cone halves into the side of the cake as shown in the photo.
13. Place additional ice cream cones circling the top of the cake with an additional cone in the center. (these cones can be attached with a drop of icing on the bottom of the cone.)
14. Add decorative touches to cake with remaining frosting if desired.
15. Fill cones with ice cream of choice & garnish with candy & cherries if desired. Return cake to freezer.
16. Remove cake from freezer approximately 10 minutes before serving.
