Ceilidh is the name of an event a local group puts on each year. It means a party in gaelic. This is a traditonal pie that they serve and everyone expects. These freeze well so are great to have on hand for those times when unexpected company drops by or you just don't know what to fix.
Ingredients:
3/4 lb colby-monterey jack cheese, shredded
1/4 lb bacon
1 tablespoon flour
6 eggs
1 tablespoon milk
1 tablespoon horseradish
1 (9 inch) pie crusts
Directions:
1. Preheat oven to 375 degrees.
2. Cook bacon till crisp, drain.
3. Crumble bacon and place in crust.
4. Mix cheese and flour.
5. Top bacon with cheese.
6. Beat eggs with milk and horseradish.
7. Pour eggs over cheese.
8. Bake 45 minutes.
