Cawliflower Curry

A nice accompaniment to meat curries. Also good with vegetarian dals.
Ingredients:
1t ginger puree(1/2t chopped ginger and water)
1 lg. cauliflower
1/2t ground tumeric
1 fresh green chil,sliced crosswise in thin slices
1cfirmly packed chopped cilantro
11/4t ground cumin
21/2t ground coriander
11/2t garam masala
1t lemon juice
salt(optional)
Directions:
1. Cut cauliflowe r into tiny florets In a lg. skillet over med heat,stir-fry ginger puree and tumeric for 2 mins.,adding a few drops of water if mixture begins to stick.
2. Add chili and cilantro,stir-frying an additional 2 mins. Add cauliflower and cook for 5 mins,adding a tsp. of water if mixture becomes too dry.
3. Add remaining ingredients
4. and 4 Tbs,. water
5. Stir for 3-4 mins then reduce heat,cover pan,and cook,stirring occasionally,for 40 mins more or till cauliflower is for tender.
