Caviar-potato Salad

This is great at Christmas if you use the red caviar with the green onions and dill for the red/green contrast. Tastes good too!
Ingredients:
6 medium-sized boiling potatoes (about 2 lbs)
1/4 cup cider vinegar
1/2 cup finely chopped onions (white or green)
1 2oz. jar of caviar (red or black)
1 cup homemade or hellman's (best foods) mayonnaise
1/2 cup sour cream
2 tbsp. finely cut fresh dill
1 tsp. salt
1/2 tsp. ground black pepper
sprigs of dill for garnish
Directions:
1. Cook potatoes until tender and drain.
2. While they are still warm, peel and cut them into 1/2 inch thick slices. Place the slices in a bowl, add the vinegar and onions, and toss together gently but thoroughly with a spoon.
3. Drain the caviar in a small strainer and run cold water over the grains to remove excess salt. Spread the grains on paper towels and gently pat them dry with fresh paper towels. Reserve about 1 tbsp. for garnish and place the rest in a bowl. With a rubber spatula, stir in the mayonnaise, sour cream, dill, salt and pepper, and taste for seasoning. Pour the mixture over the potatoes and with the spatula toss gently until the slices are evenly coated.
4. Mound the salad in a serving bowl, spread the reserved tsp. of caviar on top and garnish it with sprigs of dill if desired. Serve at once.
