My fav salad..
Ingredients:
1 small cauliflower
2 bananas
2 tablespoons lemon juice
1 1/2 cups fresh sliced peaches (or drained canned peach slices)
1/4 cup toasted almonds
1/2 cup plain yogurt
1/2 cup mayonnaise (best foods is good)
Directions:
1. Trim and wash the cauliflower.
2. Place whole in a saucepan of boiling water and cook 5 minutes.
3. (or steam or microwave) Drain well and cut into florets.
4. Leave to cool.
5. Peel bananas.
6. Slice ino 2cm pieces on the diagonal.
7. Toss in lemon juice.
8. Mix the cauliflower, bananas, peaches and almonds together in a bowl.
9. Combine the mayonnaise and the yoghurt.
10. Carefully mix through the cauliflower mixture.
11. Serve.
