This is the best and easiest soup I've ever made or eaten. The variations are limited only by your imagination.
Ingredients:
1 cauliflower
1 onion
2 stalks celery
2 cloves garlic
1 carton chicken stock
1/4 c milk or cream
1/2 c grated cheddar
salt and pepper to taste
pinch of nutmeg
Directions:
1. chop veggies into stock
2. simmer til tender
3. blend til smooth (may be frozen at this point)
4. stir in milk, cheddar and salt & pepper
5. place in bowl and top with a pinch of nutmeg

7. broccoli - cheddar - lemon zest
8. potato - cheddar - bacon & chives
9. tomato - parmesan - basil
10. parsnip - havarti - cinnamon
11. carrot - monterey jack - curry
12. roasted red pepper - cream cheese - dill
