Cauliflower Rice

This is an easy low-carb alternative to rice. It can be used with basically anything that you would use rice for.
Ingredients:
1 cauliflower head
curry powder to taste
salt to taste
Directions:
1. Grate or chop cauliflower finely to resemble rice.
2. Place in a microwavable container and cover with clingfilm.
3. Microwave for 3 minutes on high.
4. Add curry powder and salt to taste. Combine and stir with a fork to fluff up. Microwave for a further 2 minutes. You may need to microwave further if you have a large head of cauliflower.
5. It isn't necessary to add any water - if you do it will become rather gluggy.
6. You can use other flavours such as stocks or cook it plain and use it to absorb the flavour of whatever you serve it with such as a meaty stir-fry.
