Cauliflower Puree Soup

I love my hand blender. This is a very simple soup that is also extremely healthy. It's wonderful with crusty fresh bread and cheese.
Ingredients:
1 head of cauliflower, chopped
2 ribs celery, chopped
2 cloves of garlic, minced
1 carrot, peeled and chopped
1 onion, chopped
4 cups chicken stock
salt and pepper to taste
parmesan cheese, grated
Directions:
1. Heat 1 tbsp of olive oil in a pot.
2. Sweat garlic, onion, carrot and celery for a few minutes.
3. Add cauliflower and stock. Bring to a boil. Reduce heat to medium and boil for 15 minutes.
4. When cauliflower is soft/cooked, puree soup with hand blender right in the pot until smooth or desired consistency.
5. Season with salt and pepper.
6. Ladle into bowl and top with cheese.
