Cauliflower Potato Fry

cauliflower and potatoes fried in an onion paste
Ingredients:
1 small cauliflower, disassembled
2-3 medium potatoes (red skin, yukon gold, etc..), cut into cubes
3 red or mixed colour pepper, seeded, roughly chopped
1/2 tbsp garam masala (optional)
salt pepper to taste
hot paprika to taste
4-6 tbsp olive oil
2 medium onions
3 cloves garlic
2 slices ginger
1/2 cup water
vinegar to taste
Directions:
1. In a large frying pan add all the ingredients up to and including the oil.
2. Fry on medium.
3. In a blender, purée all the rest of the ingredients except the vinegar, and add to the pan.
4. Fry, turning occasionally, until the cauliflower and potato are cooked, all the liquid has evaporated, and the vegetables have browned. Season with the vinegar and serve.
