From Matt Amsden's RAWvolution. This actually does taste like mashed potatoes! It has a great flavor and the macadamia nuts give it creamy texture.
Ingredients:
2 1/2 cups cauliflower, ground in a food processor
1/4 cup macadamia nuts, ground
1/4 cup olive oil
1 teaspoon sea salt
1 very small garlic clove
black pepper, to taste
Directions:
1. In a blender, combine all ingredients except pepper and process until the mixture looks fluffy, like traditional mashed potatoes. Top with pepper and serve.
2. Note: I subsituted a few drops of Nama Shoyu for the salt, which gave it an excellent flavor.
