Cauliflower Gratin With Goat Cheese Topping

CAULIFLOWER GRATIN WITH GOAT CHEESE TOPPING This recipe came from an estate sale. I obtained it when I purchased the family collection from the McNabb Estate in Bedford, Texas in 1981.
Ingredients:
1 large cauliflower broken into florets
3 tablespoons extra virgin olive oil
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
6 ounces fresh goat cheese
1 garlic clove halved
5 tablespoons milk
1 teaspoon chopped fresh thyme leaves
1/4 cup dry fine breadcrumbs
Directions:
1. Preheat oven to 450 then oil a gratin dish with olive oil.
2. Place cauliflower in steaming basket above 1 of boiling water then cover and steam 1 minute.
3. Lift lid and allow steam to escape for 15 seconds then cover again and steam 8 minutes.
4. Remove from heat and refresh with cold water then drain on paper towels and transfer to dish.
5. Season cauliflower with salt and pepper then toss with 2 tablespoons oil and half the thyme.
6. Spread in an even layer then place garlic in mortar and pestle with 1/4 teaspoon salt.
7. Mash to a paste then combine with goat cheese and milk in food process and blend until smooth.
8. Add remaining thyme and freshly ground pepper to taste then pulse together.
9. Spread this mixture over cauliflower in an even layer.
10. Just before baking sprinkle on the breadcrumbs and drizzle on remaining tablespoon oil.
11. Bake 20 minutes then serve immediately.
