poor man's cauliflower in a bechemel sauce, inspired by Ina Garten (Barefoot Contessa)
Ingredients:
1 head cauliflower, broken into pieces
2 tbls butter
3 tbls all purpose flour
1 cup skim milk
1 cup half and half
1 tsp salt
1/2 tsp pepper
1/8 tsp ground nutmeg
1 cup italian shredded six-cheese blend
4 oz ritz crackers, crushed
Directions:
1. Place cauliflower in dutch oven (spaghetti pot) with about 1 inch water. Salt and pepper to taste. Boil until tender - not mushy.
2. Mix milk and half & half and heat in microwave - 2 minutes.
3. In sauce pot, make light golden roux with butter and flour. Add warmed milk mixture and salt, pepper, & nutmeg. Whisk and cook on med to med-hi until thickened. Take off heat and whisk in 3/4 cup cheese.
4. Cover bottom of casserole dish with small amount of sauce. Add cauliflower cover with remaining sauce. Mix remaining cheese with ritz cracker crumbs and sprinkle over top.
5. Bake at 350, 20-25 minutes, uncovered.
